Tasting notes

Our Paso Robles Bordeaux-style red blend “The Professor” shows fruit notes of rich black plum, black currant and black cherries in the nose with a hint of baker’s chocolate, espresso and fine french vanilla.

On the palate, the wine has powerful structure and great potential for aging with well managed tannin. The finish is long and lingering with additional nuances of creme brulee and cinnamon spice.

Food pairing notes

Our Bordeaux style red blend is a softer, fruitier, less tannic wine than you would expect. We like to think of it as an “easy drinking wine,” one that pairs well with a lunchtime Charcuterie board, or paté and terrines. Speaking of lunch, you’ll find “The Professor” to be a perfect match with a seasoned roast beef pressed panini.

For dinner, the flavor of any grilled meats or sausages will be enhanced by our Red blend. We especially like grilled or roasted lamb with garlic and rosemary, served with mushrooms and green bean almandine. Just go easy on the gravy or jus.

If you’re taking “The Professor” to a wine and cheese party, or hosting one yourself, we suggest getting the bottle close to an aged parmesan, or any goat or sheep cheeses. And of course, you’ll thoroughly enjoy it with brie or camembert.

Winemaker notes

Deep garnet with a vibrant ruby edge, velvety soft on the palate with bright cherry to plum flavors. This wine is weighty and full of fresh ripe berries with rich, dark accents of cocoa nib. Intriguing and delicious.

Aromas of dark chocolate, plum, black cherry, cedar and tarragon jump from the glass.
